Pav Bhaji is a popular street food in India, particularly in Mumbai. It consists of a spiced vegetable curry (bhaji) served with soft bread rolls (pav). Pav Bhaji is enjoyed as a flavourful and satisfying meal, perfect for casual gatherings and a favourite among people of all ages.
For the Bhaji
4 large potatoes, boiled and mashed
1 cup cauliflower, finely chopped
1 cup carrots, finely chopped
1 cup green peas
1 cup bell peppers, finely chopped
1 cup tomatoes, chopped
1 large onion, finely chopped
4 cloves garlic, minced
1-inch ginger, grated
2 tsp oil
4 tsp KPG Pav Bhaji Masala
1 tsp KPG red chili powder
1 tsp KPG turmeric powder
Salt to taste
1/4 cup butter
For the Pav Bhaji Bomb
8 Pav (burger buns)
Butter for toasting
Grated cheese for garnish
Fresh coriander leaves for garnish

Prepare the Bhaji
a. In a large pan, heat oil and sauté onions until translucent.
b. Add minced garlic and grated ginger, sauté until the raw smell disappears.
c. Add chopped tomatoes and cook until they turn mushy.
d. Add all the chopped vegetables, green peas, and cook until they are soft.
e. Mash the vegetables and add boiled, mashed potatoes to the mixture.
f. Add KPG Pav Bhaji Masala, KPG red chilli powder, KPG turmeric powder, and salt. Mix well.
g. Cook the bhaji on low heat, stirring occasionally. Add butter and mix until well combined. The bhaji should have a thick consistency.
Prepare the Pav Bhaji Bomb
a. Slice the pav horizontally, keeping one side intact.
b. Apply butter on the inner side of the pav and toast them on a griddle until golden brown.
c. Fill each pav with a generous portion of the prepared bhaji.
d. Garnish with grated cheese and fresh coriander leaves.
e. Serve hot with lemon wedges on the side and Enjoy!
