Dhaba Style Mix Vegetable Curry with Shahi Garam Masala

Dhaba Style Mix Vegetable Curry is a robust and flavourful dish inspired by the rustic flavours found in Indian roadside eateries known as "Dhaba's." This curry features a medley of mixed vegetables cooked in rich and aromatic tomato-based gravy. The use of KPG Shahi Garam Masala imparts a distinct warmth and depth of flavour to the curry.

Ingredients

2 cups mixed vegetables (carrots, peas, beans, potatoes), diced
1 large onion, finely chopped
2 tomatoes, finely chopped
1/2 cup tomato puree
1/4 cup cooking oil or ghee
1 tsp cumin seeds
1 tsp ginger-garlic paste
1 green chilli, finely chopped
1/2 tsp KPG turmeric powder
1 tsp KPG red chilli powder
1 tsp KPG coriander powder
1 tsp KPG Shahi Garam Masala
Salt to taste
1/2 cup fresh coriander leaves, chopped (for garnish)

Steps

Prepare Vegetables

In a pot of boiling water, blanch the diced mixed vegetables for about 5 minutes. Drain and set aside.

Cooking the Curry

a. In a pan, heat oil or ghee. Add cumin seeds and let them splutter.
b. Add finely chopped onions and sauté until golden brown.
c. Add ginger-garlic paste and chopped green chilli. Sauté for 2 minutes
d. Add finely chopped tomatoes and cook until they turn soft.
e. Add KPG turmeric powder, KPG red chilli powder, KPG coriander powder, and salt. Mix well and cook the masala until oil separates.
f. Add tomato puree and cook for an additional 3-4 minutes.

Add Vegetables and Simmer

a. Add the blanched mixed vegetables to the masala mixture. Stir to coat the vegetables with the spices.
b. Pour in a cup of water, cover the pan, and simmer until the vegetables are tender.
c. Once the vegetables are cooked, add KPG Shahi Garam Masala. Stir well and let it simmer for an additional 2-3 minutes.
d. Garnish the Dhaba Style Mix Vegetable Curry with fresh coriander leaves and enjoy!
